2010-11 MOMS Starts September 1! PDF Print E-mail

MOMS meetings for the 2010-11 school year start on September 1!  We will be meeting the first and third Wednesday of each month from 9:00am-11:00am in Allen Hall.  We welcome moms of all ages and stages!  Feel free to bring your little ones or drop them off in the no-cost nursery.  We look forward to seeing you there!

MOMS is on hiatus for the summer.  We had a great year this year.  We want to say a special thank you to Jill Austin and Kim Anciaux who co-chaired MOMS for 2009-10.  We look forward to starting meetings again this fall!

Tarragon Chicken Salad with Grapes and Walnuts 

4 cups cubed cooked chicken (about 1 3/4 lbs.) - I used Tyson cooked chicken
1 c. walnuts, toasted and chopped (about 10 minutes in a 350 degree oven) - cool before mixing in salad
1 celery rib, cut into 1/4-inch-thick slices (1 c.)
2 T. finely chopped shallot
2 c. halved seedless red grapes
3/4 c. regular mayonnaise (not light mayo)
3 T. tarragon vinegar
2 T. finely chopped fresh tarragon
1/2 t. salt
1/2 t. black pepper
 
Mix together all ingredients in a large bowl until combined well.      
 
Note:  This salad is best if prepared just prior to serving.
 
 

Lemon Yogurt Bread

 1 1/2 c. all-purpose flour
2 t. baking powder
1/2 t. kosher salt
1 c. plain whole-milk yogurt
1 1/3 c. sugar, divided
3 extra-large eggs
2 t. grated lemon zest (2 lemons)
1/2 t. pure vanilla extract
1/2 c. vegetable oil
1/3 c. freshly squeezed lemon juice
 
Glaze
1 c. confectioners' sugar
2 T. freshly squeezed lemon juice
 
 
Preheat oven to 350 degrees.  Grease an 8 1/2 x 4 1/4 x 2 1/2 inch loaf pan.  Line the bottom with parchment paper.  Grease and flour the pan.
 
Sift together the flour, baking powder, and salt into one bowl.  In another bowl, whisk together the yogurt, 1 c. sugar, and the eggs, lemon zest, and vanilla.  Slowly whisk the dry ingredients into the wet ingredients.  With a rubber spatula, fold the vegetable oil into the batter (using an "s" motion with the spatula), making sure it's all incorporated.  Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean.
 
Meanwhile, cook the 1/3 c. lemon juice and remaining 1/3 c. sugar in a small pan until the sugar dissolves and the mixture is clear.  Set aside.
 
When the cake is done, allow it to cool in the pan for 10 minutes.  Carefully place on a baking rack over a sheet pan.  While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in.  Cool.
 
For the glaze, combine the ocnfectioners' sugar and lemon juice and pour over the cake.
 
Leafy Green Salad with Fruit
 
16 oz. baby spring mix lettuce
(2) 16oz. can mandarin oranges
1/2 small red onion, sliced thin and rings cut in 1/2 - place in Ziploc bag
(2) 5 oz. dried tart cherries
(2) 6 oz. sunflower kernels
1/ 2- 1 full bottle of Brianna's Poppy Seed dressing
 
 
Berry Bread Pudding with Vanilla Cream Sauce
  • 1  (16-ounce) French bread loaf, cubed
  • 1  cup  frozen raspberries (do not thaw)
  • 1  cup  frozen blackberries (do not thaw)
  • 4  large eggs, lightly beaten
  • 2 3/4  cups  milk
  • 1  cup  sugar
  • 1/4  cup  butter, melted
  • 1  teaspoon  ground cinnamon
  • 1  teaspoon  ground nutmeg
  • 1  teaspoon  vanilla extract
  • 2  tablespoons  melted butter
  • 2  tablespoons  sugar
Preparation
  
Arrange half of bread pieces in a lightly greased 11- x 7-inch disposable baking dish. Arrange frozen berries in a single layer over bread. Top with remaining bread pieces.
Whisk eggs and next 6 ingredients until smooth. Slowly pour egg mixture over bread, pressing down with a wooden spoon until bread absorbs mixture. Let stand 20 minutes.
Bake, covered, at 350° for 30 minutes. Uncover, brush evenly with 2 tablespoons melted butter; sprinkle evenly with 2 tablespoons sugar, and bake 30 more minutes or until set. Remove from oven, and let stand 30 minutes. Serve with Vanilla Cream Sauce. Garnish, if desired.
 
*This can be made the day before and refrigerated.
 
Vanilla Cream Sauce
  • 2  cups whipping cream
  • 1  cup  sugar
  • 2  tablespoons  all-purpose flour
  • 1/2  cup  butter
  • 1  teaspoon  vanilla extract

Preparation

Stir first 3 ingredients together in a saucepan. Add butter, and cook, stirring constantly, over medium heat until butter is melted and mixture begins to boil. Cook, stirring constantly, 3 minutes or until mixture is slightly thickened. Remove from heat, and stir in vanilla. Serve warm.

*This can be made the day before and stored in the refrigerator.

Holy Savior Academy Ramp Project
  The Knights recently added a handicap access ramp to one of the buildings at Holy Savior Academy.  Several St. Thomas Knights of Columbus members volunteered their Time and Talent building the ramp to support the tutor lab at HSA.   A teacher that has taught many years in the Catholic diocese needed an access ramp to help get to her class room and tutor students.  The Knights spent three weekends building the ramp just in time to start the school year.  Ms Burnett was overjoyed by the support she received from the Knights.

Be the best Mom you can be, by being the best Wife you can be!

Wow!  We are off to a great start to the new year, and our next meeting promises to be one to look forward to!  We hope you will join us (maybe for the first time even!) on Wednesday, March 3rd as we welcome John and Mary Mertes.  They are joining us to talk about the various stages of marriage, and how to love one another during good times and bad.  Our "how to love him when you might not really like him very much" speakers!!! John and Mary have worked with couples in every phase of marriage as they started with Marriage Encounter in 1973, and began working with Retrovaille in the early 1990's. They also served as Directors for Marriage and Family Life for the Wichita Diocese for several years. They have 9 children.  We look forward to having them visit with us and hope you will be there as well.

Lord Jesus, You are the Divine Physician,

And the Source of all life and health.

Guide our nation at this critical moment,

As our government seeks health care reforms.

Give our elected officials the humility to know

That they are servants, not masters.

Give them the wisdom to realize

That every life has equal value.

Give them the strength to resist the idea

That some lives can be sacrificed to save others

Or that killing the unborn is a part of health care.

Give your people the courage to speak up

And to hold public officials accountable for their actions.

Save us, Lord Jesus, from a culture of death,

And let every reform in our public policy

Be based on the reform of our hearts and minds

In the light of your Gospel,

For you are Lord forever and ever.

Amen.

On Wednesday, December 2nd, MOMs gathered in the Assembly room to decorate table top Christmas trees and fill stockings for the patrons of The Lord's Diner.  With everyone's help, we were able to beautifully adorn 60 trees, and stuff 100 Christmas stockings!  The trees will grace the dining room tables at The Lord's Diner, and be sent home with each family on Christmas Eve, to help bring the spirit of Christmas into their homes.  The Christmas stockings will be distributed to all the children on Christmas Eve as well.  Thank you to all who helped with this wonderful service project - it will bring smiles to many faces this blessed Christmas season!

 
Evening on the Plaza proceeds presented to The Lord's Diner PDF Print E-mail

The Evening on the Plaza was a great success again this year! Thanks to the overwhelming generosity of the local business community and St. Thomas parishioners, we were able to make a sizable donation to The Lord's Diner and fund the MOMS group expenses throughout the school year.  On Wednesday, November 18th, we presented Wendy Glick of The Lord's Diner with a check for $3,500.  Thanks to everyone who supported this event by donating auction items, attending the event, bidding on auction items, donating food or drinks and time.  We couldn't have done it without you!

The Consolation Apostolate helps families of St. Thomas Aquinas plan the Funeral Mass for their deceased loved one. We meet with the family generally at the Church to choose readings, music, general intercessions, family participants and memorials.  We also make arrangements for an organist, cantor, servers and a funeral lunch for the family if desired. A member of the apostolate will be present at the Funeral Mass.

 

This group also sends out condolence cards to parishioners who have lost a loved one within the first month after their loss.  We also like to send a note to families on the first anniversay of the death of their loved one. 

 

The other activity that our apostolate plans is Evening Prayer for the Dead.  It is held
on the first Sunday in November that is closest to All Souls day, which is November 2
each year.  At the beginning of this beautiful, meaninful Evening Prayer Liturgy, all the
names of parish members and family
members of parishioners who have died from

the year that ends September 30 are read and votive candles are lit in their memory.
Evening Prayer
begins at 6 pm on the designated Sunday.  Music is provided by the
Contemporary Choir. Following the liturgy, participants are encouraged to join members

of the Consolation Apostolate in the Assembly Room for refreshments and fellowship

and take home a votive candle used in the liturgy.

   

Anyone who has had a miscarriage or the death of a child before birth is also
encouraged
to contact us.  Materials and someone to help are available. We want
you to know you are not alone.  We are here to serve you in your time of need. 
Please feel free to contact the coordinator at any time for help on your journey through
the grieving process. 

 

We have trained people in our group who can provide those going through the
grieving process, with support and referrals.

     

Currently we are seeking individuals who can assist with this apostolate.  Funeral
Mass coordinators are needed as well as someone to send out First Anniversary
of Death condolences.
